LEMON AND CHOCOLATE EASTER CUPCAKES!!

Hi Guys and Welcome to today's blog post. First i want to say HAPPY EASTER EVERYONE, i hope you our all having a wonderful Easter and of course munching away on Easter Eggs. Apologies for not posting any blog posts over the last couple of days, i have been a little busy with a new project i'm working on. I will be filling you all in on it later on during the week!! Anyway back to today's blog i'm going to be sharing with you all these LEMON AND CHOCOLATE EASTER CUPCAKES!! (individual cupcakes).

So if you would like to bake this Lemon and Chocolate Easter Cupcakes, i'll be leaving a list of want your going to need along with a Step by Step Guide on how to make them below!!

So first your going to need:

INGREDIENTS
Cupcake Mixture
200g/7oz Self Raising Flour
200g/7oz Butter (at room temperature)
200g/7oz Caster Sugar
1 Level Teaspoon Baking Powder
4 Eggs 
2 Tablespoons Milk
2 Lemons
Coco Powder
Easter Decorations (Chocolate Flakes, Sprinkles)
UTENSILS
6-8 Cupcake Cases
1 Large Bowl
Weighing Scales
Spatula
Cooling Rack
Electric Whisk
Serving Plate
Spoon

STEP 1: First start off with your dry ingredients, first add 200g/7oz Self Raising flour, then 200g/7oz Caster Sugar and 1 Level Teaspoon Baking Powder into a large bowl, don't forget to sieve the three ingredients. 

STEP 2: Next add 200g/7oz Butter, 4 Eggs and 2 Tablespoons Milk, then whisk the ingredients together to form a smooth soft batter using an Electric Whisk.

STEP 3: Now that all your ingredients have been whisked, its now time to separate your mixture as you want to create a batch of Lemon Cupcakes and Chocolate Cupcakes. For this process i just dived the mixture between two bowls, preferably 4 spoonfuls between each bowl.

STEP 4: Once you have divided the mixture, its now time to add some Lemon Juice (Juice of 1 Lemon)  to one bowl of mixture and whisk.
STEP 5: Then add 1 heaped Tablespoon of Coco Powder to the other mixture, then whisk.

STEP 6: Now that both mixtures have been whisked its now time to place the mixture into the individual cases/silicone cupcake moulds (i first started off with the Lemon Mixture followed by the Chocolate Mixture). Place your cupcakes on a flat tray and bake for around 20 minutes on gas mark 4. (follow the same instructions for the next batch of chocolate cupcakes).

STEP 7: Once baked, take your cupcakes out of the oven, then place on a cooling rack and allow them to cool for a couple of minutes before icing.

STEP 8: Once your Cupcakes or cooling, its now time to start on the two different icings for the cupcakes. First start off by beating/whisking the butter until smooth, then gradually beat in the icing sugar. Finally beat in the Vanilla Essence, if used. Next again separate the icing between 2 bowls, 4 spoonfuls between the two.
STEP 9: In one bowl, add 1 juice of a lemon to it and whisk, then add 1-2 Tablespoons of Coco Powder in to the second bowl and then again whisk!!

STEP 10: Then once both batches of Cupcakes have been cooled, now its time to ice them. I decided to use these Cake & Cookie Squeeze Decorating Bottles.

STEP 11: To decorate the Chocolate Cupcakes i'm using some Chocolate Flakes and for the Lemon Cupcakes i'm using the Rind of a Lemon!!

And ta'da your Lemon and Chocolate Easter Cupcakes our done!!
All that's left to do is eat them!!
