MY MOTHER'S DAY BAKING BLOG!!

Hi Guys and Welcome to Today's blog, i hope you are all having a brilliant weekend so far. So tomorrow is Mother's Day, i hope you all have your lovely gifts all wraped for your Mum...I have mine and i can't wait to see if she like's what i got her!! So as its Mother's Day tomorrow, i'm sure every Mum out there likes to have a cake either baked or bought for this special day, so i'm going to share with you all in MY MOTHER'S DAY BAKING BLOG this really easy Classic Victoria Sandwich Cake. Personally my Mum loves this cake and that's why i have baked one just in time for Mother's Day tomorrow. 

So if you would like to bake this cake below i'll be leaving a list of want your going to need along with a Step by Step Guide on how to make it!!

So first your going to need:

INGREDIENTS
Cake Mixture
200g/7oz Self Raising Flour
200g/7oz Butter (at room temperature)
200g/7oz Caster Sugar
1 Level Teaspoon Baking Powder
4 Eggs 
2 Tablespoons Milk

Filling 
125g/4oz Butter (at room temperature)
175g/6oz Icing Sugar
Few drops of Vanilla Essence (optional)
Jar of good quality Jam (Strawberry)


UTENSILS
Grease Proof Paper
2 Cake Tins
1 Large Bowl
Weighing Scales
Spatula
Cooling Rack
Electric Whisk
Serving Plate
Spoon



STEP 1: First take your 2 Cake Tins and your Grease Proof Paper. Place your Tin on the paper and draw around the tin using a pen or pencil, when your done then cut the circle out. (Then do the second tin) 


STEP 2: Next grease your Cake Tins using a little butter. Then place the paper in each tin and apply a little more butter on top and to the sides to prevent the cake sticking to the tin.


STEP 3: Now that your preparation is done for the cake, its now time to start on the mixture. Start off with your dry ingredients, first add 200g/7oz Self Raising flour, then 200g/7oz Caster Sugar and 1 Level Teaspoon Baking Powder into a large bowl, don't forget to sieve the three ingredients.



STEP 4: Next add 200g/7oz Butter, 4 Eggs and 2 Tablespoons Milk, then whisk the ingredients together to form a smooth soft batter using an Electric Whisk.


STEP 5: Then take your Spatula and divide the mixture between the prepared tins. Next bake for around 20 minutes until golden brown and when the cake springs back when pressed.


STEP 6: Once baked then take both sandwiches out of the oven, then turn each sandwich out onto a cooling rack and allow to cool for a couple of minutes.


STEP 7: While each sandwich is cooling, make the filling by beating/whisking the butter until smooth, then gradually beat in the icing sugar. Finally beat in the Vanilla Essence, if used.



STEP 8: Next spread the Butter Cream over the base of one of the sponges, then spread the jam over the other and sandwich the two together.


STEP 9: To make the cake look more presentable, lightly dust some Icing Sugar over it!!


STEP 10: Enjoy!! :-)
